Paleo, Gluten & Dairy Free Banana & Coconut Wafers (and sesame seedsand cocoa)

Finally and Hooray! I nailed the recipe! I don't know if these should be called wafers, crackers, crisps, biscuits. I'm at a loss. 


This recipe is sooooooooooo easy. Serious! 

Preheat oven at 350 F

Gather up:
Medium sized mixing bowl
Largish baking sheet
2 sheets parchment paper 12in x 15in or 38.1cm x 30.4cm
An instrument to mix it all together. No! Not a wand! A fork or even a spatula 
A pizza cutter or some other sharp object



Ingredient:
1 disgustingly ripe banana (if you have one in your freezer you know what I mean)
1/3 cup almond flour
1/3 cup shredded coconut
1/3 cup sesame seeds
11/2 - 2 tbsp cocoa powder (or to taste)

Method:
Mix all the dry ingredients in a bowl with the ripe banana. I add one ingredient at a time and mix each well.
Place parchment paper on a flat baking sheet. Turn batter out onto parchment paper. Place another piece of parchment paper on top. Use a rolling pin to spread. I'm useless at shaping a rectangle. You, on the other hand, may prevail.


Remove the top parchment paper. Place in pre heated oven on middle rack. Bake for 10 to 15 minutes. Do keep an eye on them. Once it has cooked, cut into small squares. Let cool completely before storing in a container.
